Low Carb Fruit Loaf Cake - Gluten Free
We would define this as an all-round fruit loaf but we also put a little icing on top so it also classifies as a Christmas fruit cake. but with a little less fruit to keep it low carb. We've used blueberries, cherry slices, orange zest and lemon peel along with some cinnamon and cloves to bring all of it together. We love it so much that we made it a winter-long cake because it's just delicious and is the perfect tea accompaniment.
So the only question that remains is do you enjoy these with tea or cheese or both? This loaf is made in our Gluten Free Kitchen located in Hackney London but does contain an ingredient that has a little bit of barley extract.
Designed to be eaten warm with a cuppa! Serving tip from a customer (for the occasional drinkers) - a splash of rum then heated up for 5-10 seconds makes this taste just as good as the rum cake that comes out during Christmas.
